Walnut, Mint & Pomegranate Salad
WALNUT, MINT & POMEGRANATE SALAD

INGREDIENTS
2 cups spinach
1 cup swiss chard
3 persian cucumbers, chopped
1 yellow bell pepper
1/2 cup mint, chopped
1/4 cup pomegranate seeds
1/4 cup walnuts, toasted
DRESSING
1/3 cup tahini
1 tbsp olive oil
1/3 cup water
2 tsp smoked paprika
1-2 tsp cumin
1-2 tsp coriander
1/4 cup scallion tops, minced
juice of 1 lemon
salt to taste
DIRECTIONS
1. In a medium bowl, mix all chopped ingredients
2. To make the dressing, whisk tahini with olive oil and water. Add more water as needed to get the consistency to your liking
TIPS
For a more complete meal, serve with a soft boiled egg or nut encrusted fish.
You can also use the Anti-inflammatory Herb Sauce on this salad
Pre-toast and season the walnuts for more flavor
